Pleasantly Palatable Peanut Sauce

#Creamy #peanut #butter moves beyond snacks and sandwiches and into a beautifully balanced tart, sweet, and savory #sauce. This easy, versatile condiment puts bottled versions out of the running, thanks to the warmth and zing of fresh ginger and garlic. If you’d like a little heat, try stirring in a generous pinch of crushed red pepper flakes. Drizzle the sauce over pan-grilled chicken or shrimp skewers, use as a #dip for spring rolls, or toss with a vegetable and Soba noodle salad.

What do you think of when it comes to peanut sauce? The side condiment you eat with your chicken satay? Or is it the sauce drizzled over noodles at your favorite restaurant? Over time, peanut sauce has come to refer to many things. We know its roots are in the many sauces and marinades made from fried and ground peanuts commonly found throughout Asia, Indonesia, and Africa, but for the everyday home kitchen, we’re taking inspiration from these flavors to make a sauce that relies on common pantry staples starting with your regular, run-of-the-mill peanut butter.

Since peanut butter takes the lead, you could easily think of this as a peanut butter sauce. It’s a spectacular dipping sauce for summer rolls and grilled meats and makes a mean bowl of Soba noodles. The rich peanut flavor gets some vibrancy from rice vinegar, a subtle sweetness from honey, and plenty of spice from chile paste, garlic, and ginger.

This peanut sauce also makes a stellar veggie dip. Store-bought veggie dips are notoriously full of preservatives, but not this one. Veggie dip aside, this peanut sauce is wonderful over noodles and served with spring rolls. You can also drizzle it on steamed or roasted vegetables for some extra protein and tons of flavor. It’s great with mango, too!
