Let's be real! I have days when I just want to be a vegetarian for a day since I ate too much meat during the week! One of the easiest ways to enjoy your veggies is to have it as a Japanese pancake called okonomiyaki.

Let's make this savory Japanese pancake called Okonomiyaki from scratch! Okonomiyaki is often compared to a Japanese pizza. It's made with a batter of wheat flour, eggs, and shredded cabbage, and can be customized with various toppings like meat, seafood, vegetables, and cheese.  The name "okonomiyaki" literally means "as you like grilled," reflecting its versatility.


Here's a quick breakdown:

  • Batter: A mixture of wheat flour, eggs, and shredded cabbage.  

  • Toppings: Can include meat (like pork or bacon), seafood (like shrimp or octopus), vegetables (like onions or mushrooms), and cheese.  

  • Sauces: Okonomiyaki is typically served with a sweet, tangy sauce, often topped with mayonnaise, dried seaweed, and bonito flakes.

Ingredients: for 5 Okonomiyaki

  • 3 Cups of thinly sliced cabbage

  • 1 Cup of thinly sliced carrots 

  • 3.5 Cups of All Purpose Flour 

  • 10 Tbsp olive oil (2 Tbsp oil per dinner cake)

  • ¼ tsp of baking powder

  • ½ tsp salt

  • ½ tsp of Bonito Powder

  • 3 cups of water

  • 2 eggs


Directions:

Directions should always be short and to the point I think, so here it goes!


  1. In a large bowl mix all the dry ingredients together.

  2. When the dry ingredients are mixed well put in your wet ingredients. Your 3 cups of water and your eggs.

  3. After you have made your okonomiyaki batter, put in your cabbage and carrots and combine everything together.

  4. In a sauce pan or griddle place 1 TBSP of oil to the pan on medium heat. (Needs 1 tbsp oil on each side of the Okonomiyaki)

  5. Scoop your okonomiyaki mixings into the pan and keep it shaped into a circle. 

  6. It's time to flip when you see the air bubbles coming through the edges of your dinner pancake. (If you're wanting any protein like thinly sliced pork belly or a slice of ham. I would recommend to place it on top as you add another 1 Tbsp of oil before flipping your okonomiyaki) 

  7. Dress your savory cabbage pancake however you like but traditionally it is dressed with Kewpie mayonnaise, okonomiyaki sauce, furikake and dancing katsuo bushi.
