Gluten Free Mermaid Party Cupcakes

Are you allergic to gluten, or needing to host a gluten-free party? Well, with these mermaid party sprinkles, my gluten-free cupcakes recipe should do the trick! 



I don't know about you, but when it comes to gluten-free foods, I'm always looking for the closest taste and texture to the "real thing". Let's me just say that I have tried all kinds of gluten-free cake recipes and some were.... meh and so-so and tasted too moist while others were too chalky-tasting. (I'm really just being honest and truthful as what my taste buds are telling me.) That being said, combing through all of the gluten-free cake recipes that I have come across online, I have come up with a recipe that satisfies my taste buds. The gluten-free cupcake recipe down below is pretty fluffy and tastes almost as if you're eating an ordinary cupcake. You can only see what I'm talking about if you try this recipe and have a taste. In the center, it holds up to the perfect amount of moisture and the cakey fluffy texture that I'm always chasing in a cupcake. 

Maybe you can tell by the context of the way I'm trying to describe and explain this gluten-free cupcake that I'm not 100% gluten free either but, I had to perfect the recipe, and find a recipe for my dear sister who is highly allergic to gluten, for this reason, I came up with this gluten-free cupcake recipe. 

As an added bonus, the mermaid party themed sprinkles is gluten-free. Other that being gluten-free, the sprinkles are also vegan, kosher, halal, dairy free, no hydrogenated fats, no artificial sweeteners, no artificial coloring, no artificial flavors and free from preservatives.

Sunflower oil (or oil of choice) 3/4 cup (160g.) granulated white sugar2 Medium organic room-temperature eggs 1 1/4 cups (180g.) gluten-free all purpose flour 1/4 teaspoon salt (pink Himalayan salt) 1 3/4 teaspoons baking powder 1/2 cup (4 oz.) dairy-free almond milk (or milk of choice) 2 teaspoons gluten free vanilla extract  Recipe for gluten free Frosting:

1 stick (8 Tbs.) room temperature butter  1 teaspoon gluten free vanilla extract 3 cups (360g.) powdered sugar 2 tablespoons dairy-free milk (or dairy milk) Cupcake Instructions: Preheat oven to 350°F (180°C). 

In a pyrex 2 cup measuring cup, combine all the wet ingredients together. That includes the oil, sugar, milk, eggs and the gluten free vanilla extract (imitation vanilla is ok to use because that is gluten free as well. I did it by hand with a whisk)

Add the gluten free flour, pink Himalayan salt, baking powder, and vanilla extract; beat at medium speed in an electronic mixer for one minute. (If you don't have an electronic mixer, you can use a whisk or a fork but just get ready for an arm workout.)  Spoon the gluten free cupcake batter with an ice cream scooper evenly into cupcake silicone liners. 

Place the cupcake tin in the center of oven. 

Bake for 18-20 minutes or until the cupcake toothpick test is clean. (Note the toothpick test is when you take the cupcakes out of the oven and poke the cupcake with a toothpick right in the center of every cupcake.) Let the gluten free cupcakes cool on a cooling rack for 5-8 minutes. Then, remove cupcakes from pan and make sure the gluten free cupcakes are completely cooled before applying the frosting. (Or else your frosting will melt and not keep its fancy frosting topped shape, this is a little side note obviously for cup cake decorating purposes. I have to say, the cake itself is yummy and delicious. Hopefully, you get to try this out and let me know what your thoughts are on this gluten free cupcake recipe) For the frosting:  First time making frosting? Before you begin, make sure you have room-temperature butter and slice it into small slices. Your arm or your mixing bowl will really appreciate it. Anyway,in a mixing bowl, beat the butter and vanilla together until smooth and creamy. Gradually add powdered sugar, one cup at a time, as you continue beating. Alternate one cup of powdered sugar and 1 tablespoon of milk until all ingredients  create a creamy mixture.  Combine and beat in an additional cup of powdered sugar which may be needed to obtain the desired consistency. If your aiming for a particular color, this will be the time to put in the food coloring. If the consistency has changed due to adding touch food coloring, it's ok to add an additional 1/4 cups of powdered sugar at a time to get the consistency back to where you want it to be. Hopefully, this frosting recipe was easy to follow and easy to do.
